Instructions
- Preheat oven to 425°F (220°C). Heat cast iron skillet in oven.
- In a bowl, whisk together cornmeal, baking powder, and salt.
- In another bowl, whisk together buttermilk and egg.
- Gradually add wet ingredients to dry ingredients, mixing until just combined.
- Remove hot skillet from oven, add beef tallow, and swirl to coat.
- Pour batter into hot skillet and bake for 20-25 minutes, or until golden brown.
- Let cool slightly before slicing and serving.
